  • 1 1/2 cups all-purpose flour
  • 1 tsp baking powder
  • 1/2 tsp baking soda
  • 1/2 tsp salt
  • 3 large bananas mashed
  • 1/2 cup granulated sugar
  • 1/4 cup brown sugar packed
  • 1/3 cup vegetable oil
  • 1 large egg
  • 1 tsp vanilla extract
  • 1/2 tsp ground cinnamon

Instructions
 

  • Preheat the oven to 350°F (175°C) and line a muffin tin with liners.
  • In a mixing bowl, whisk together the flour, baking powder, baking soda, salt, and cinnamon.
  • In another bowl, whisk together the mashed bananas, granulated sugar, brown sugar, vegetable oil, egg, and vanilla extract until smooth.
  • Gradually add the dry ingredients to the wet ingredients, stirring until just combined.
  • Divide the batter evenly into the prepared muffin tin, filling each cup about 3/4 full.
  • Bake for 18-20 minutes, or until a toothpick inserted in the center comes out clean.
  • Let the muffins cool in the pan for 5 minutes before transferring to a wire rack to cool completely.
