- 1 1/2 cups all-purpose flour
- 1 tsp baking powder
- 1/2 tsp baking soda
- 1/2 tsp salt
- 3 large bananas mashed
- 1/2 cup granulated sugar
- 1/4 cup brown sugar packed
- 1/3 cup vegetable oil
- 1 large egg
- 1 tsp vanilla extract
- 1/2 tsp ground cinnamon
Preheat the oven to 350°F (175°C) and line a muffin tin with liners.
In a mixing bowl, whisk together the flour, baking powder, baking soda, salt, and cinnamon.
In another bowl, whisk together the mashed bananas, granulated sugar, brown sugar, vegetable oil, egg, and vanilla extract until smooth.
Gradually add the dry ingredients to the wet ingredients, stirring until just combined.
Divide the batter evenly into the prepared muffin tin, filling each cup about 3/4 full.
Bake for 18-20 minutes, or until a toothpick inserted in the center comes out clean.
Let the muffins cool in the pan for 5 minutes before transferring to a wire rack to cool completely.
