1 cup granulated sugar 1/2 cup unsalted butter softened 2 large eggs 1 tsp vanilla extract 1 tbsp lemon zest for a fresh flavor 1 cup rice flour 1 cup all-purpose flour 1 tbsp baking powder 1/2 cup milk 1/4 cup sugar for topping muffins
Preheat your oven to 350°F (175°C). Line a muffin tin with parchment paper.
In a mixing bowl, beat together the butter and sugar until light and fluffy using an electric mixer.
Mix in the eggs, vanilla extract, and lemon zest until well combined.
Gradually add rice flour, all-purpose flour, and baking powder. Mix in the milk until the batter is smooth.
Spoon the batter into the prepared muffin tin, filling each cup about 3/4 full. Sprinkle the tops with additional sugar.
Bake for 20-25 minutes or until the muffins are golden and a toothpick inserted in the center comes out clean.
