Ingredients
  

  • 1 cup rolled oats
  • 1 ripe banana mashed
  • 1 tsp baking powder
  • 1 tsp ground cinnamon
  • ½ cup milk dairy or plant-based
  • 1 egg or flax egg for vegan
  • 2 tbsp maple syrup or honey
  • ½ tsp vanilla extract
  • For the Churro Topping:
  • 2 tbsp granulated sugar
  • ½ tsp ground cinnamon

Instructions
 

  • Preheat the Oven:
  • Preheat your oven to 350°F (175°C). Grease a small baking dish or two ramekins.
  • Blend or Mix the Batter:
  • In a blender, combine the rolled oats, mashed banana, baking powder, cinnamon, milk, egg, maple syrup, and vanilla extract. Blend until smooth. Alternatively, mix in a bowl for a chunkier texture.
  • Pour into Baking Dish:
  • Pour the batter into the prepared baking dish or ramekins, filling evenly.
  • Bake:
  • Bake for 20–25 minutes, or until the oats are set and lightly golden on top.
  • Prepare the Churro Topping:
  • In a small bowl, mix the sugar and ground cinnamon.
  • Top and Serve:
  • Sprinkle the churro topping over the baked oats. Serve warm for a comforting, churro-inspired breakfast.
