Instructions
Make the Batter: In a saucepan, heat water, butter, sugar, and salt over medium heat. Bring to a boil, stirring constantly. Reduce heat to low. Immediately add flour and stir vigorously until the dough pulls away from the sides and forms a ball. Remove from heat and let cool for 5 minutes. Beat in the egg until fully incorporated.
Waffle-fy the Dough:Whisk in baking powder and baking soda. The batter will be slightly thicker than pancake batter.
Preheat & Grease:Preheat your waffle iron according to the manufacturer's instructions. Lightly grease with cooking spray or melted butter.
Cook Waffles:Ladle the batter onto the hot waffle iron, spreading slightly if needed. Close the lid and cook according to your waffle iron's instructions until golden brown and crispy.
Coat and Enjoy:Remove the waffle carefully and immediately roll in the cinnamon-sugar mixture. Serve warm.
