2 cups ripe melon such as cantaloupe or honeydew, cubed 1 cup cucumber peeled and chopped 1/4 cup fresh mint leaves plus extra for garnish 2 tbsp fresh lime juice about 1 lime 2 tbsp honey or sweetener of choice 2 cups cold water 1 cup ice cubes for serving
In a blender, combine melon, cucumber, mint leaves, lime juice, honey, and 1 cup of cold water. Blend until smooth.
If desired, pour the mixture through a fine mesh strainer into a pitcher to remove any pulp for a smoother drink.
Add the remaining cold water to the pitcher and stir well. Taste and adjust sweetness with additional honey if needed.
Fill glasses with ice cubes and pour the cucumber mint melon cooler over the ice. Garnish with fresh mint leaves and serve chilled.
