Ingredients
  

  • Churro Dough:
  • 1 cup water
  • 2 tbsp granulated sugar
  • 2 tbsp unsalted butter
  • ¼ tsp salt
  • 1 cup all-purpose flour
  • 1 large egg
  • 1 tsp vanilla extract
  • 2 tbsp blueberry puree strained to remove seeds
  • 4 –5 drops blue gel food coloring optional for a vibrant Dodger blue
  • Cinnamon-Sugar Coating:
  • ½ cup granulated sugar
  • 1 tsp ground cinnamon
  • For Frying:
  • Vegetable oil enough for 2–3 inches in the pan

Instructions
 

  • Step 1: Prepare the Blueberry Puree
  • If using fresh or frozen blueberries, blend them in a small food processor until smooth. Strain the puree to remove seeds and set aside.
  • Step 2: Make the Dough
  • In a medium saucepan, combine water, granulated sugar, butter, and salt. Bring the mixture to a boil over medium heat, stirring until the butter melts.
  • Remove from heat and add the flour all at once. Stir vigorously with a wooden spoon until the dough forms a ball and pulls away from the sides of the pan.
  • Step 3: Incorporate the Flavors
  • Let the dough cool for 5 minutes. Then mix in the egg, vanilla extract, and blueberry puree. Stir until smooth. If you want a more vibrant blue color, add the gel food coloring and mix until evenly distributed.
  • Step 4: Heat the Oil
  • In a deep frying pan or pot, heat about 2–3 inches of vegetable oil to 375°F (190°C).
  • Step 5: Pipe the Churros
  • Transfer the dough to a piping bag fitted with a large star tip. Pipe 4–5-inch strips of dough directly into the hot oil, using scissors to cut the ends. Fry 3–4 churros at a time to avoid overcrowding.
  • Step 6: Fry the Churros
  • Fry the churros for about 2–3 minutes per side, or until golden brown and crisp. Remove them with tongs or a slotted spoon and drain on paper towels.
  • Step 7: Coat with Cinnamon Sugar
  • In a small bowl, mix the granulated sugar and cinnamon. While the churros are still warm, roll them in the cinnamon-sugar mixture until coated.
  • Step 8: Serve and Celebrate
