Instructions
In a food processor, combine pistachios, graham cracker crumbs, and granulated sugar. Pulse until finely ground. Add melted butter and pulse until the mixture resembles wet sand.
Press the crust mixture evenly into a 9-inch tart pan. Bake at 350°F (175°C) for 10-12 minutes until golden. Let cool completely.
In a small saucepan, heat the heavy cream until it just begins to simmer. Remove from heat and pour over chopped dark chocolate in a bowl. Let sit for 2 minutes, then stir until smooth. Mix in rose water if using.
Pour the chocolate ganache into the cooled crust. Use a spatula to spread it evenly. Sprinkle with chopped pistachios and optional edible gold flakes.
Refrigerate the tart for at least 2 hours until the ganache is set.
