1 cup water 1/2 cup unsalted butter cut into pieces 1/4 cup strong brewed coffee cooled 1 tbsp sugar granulated 1 cup all-purpose flour 2 large eggs 1/2 tsp vanilla extract 1 cup sugar for coating churros 1 tsp ground cinnamon for coating churros
In a saucepan, bring water, butter, coffee, and 1 tablespoon of sugar to a boil.
Reduce heat to low, add flour, and stir vigorously until the mixture forms a smooth ball.
Transfer the dough to a mixing bowl. Using an electric mixer, beat in eggs one at a time, then add vanilla extract until the dough is smooth.
