  • 1 cup water
  • 4 tbsp unsalted butter cubed
  • 2 tbsp granulated sugar
  • 0.5 tsp salt
  • 1 cup all-purpose flour sifted
  • 2 large eggs room temperature
  • 2 tbsp ube extract for color and flavor
  • 4 cups vegetable oil for frying
  • 0.5 cup shredded coconut sweetened, for coating
  • 0.5 cup granulated sugar for coating

Instructions
 

  • In a saucepan, bring water, butter, sugar, and salt to a boil over medium heat.
  • Reduce heat to low and stir in the flour until a dough forms and pulls away from the sides of the pan.
  • Remove from heat and let cool slightly. Beat in eggs one at a time, then add ube extract and mix until smooth.
  • Transfer the dough to a piping bag fitted with a star tip.
  • Heat vegetable oil in a deep fryer to 375°F (190°C).
  • Pipe 4-inch strips of dough into the oil, frying until golden brown, about 2-3 minutes per side.
  • Use a slotted spoon to transfer churros to a paper towel-lined baking sheet.
  • Mix shredded coconut and sugar in a bowl, then roll warm churros in the mixture until fully coated.
  • Enjoy warm with a side of coconut or chocolate dipping sauce.

  • Optional Equipment: A thermometer ensures oil stays at the correct temperature.
