1 cup water 4 tbsp unsalted butter cubed 2 tbsp granulated sugar 0.5 tsp salt 1 cup all-purpose flour sifted 2 large eggs room temperature 2 tbsp ube extract for color and flavor 4 cups vegetable oil for frying 0.5 cup shredded coconut sweetened, for coating 0.5 cup granulated sugar for coating
In a saucepan, bring water, butter, sugar, and salt to a boil over medium heat.
Reduce heat to low and stir in the flour until a dough forms and pulls away from the sides of the pan.
Remove from heat and let cool slightly. Beat in eggs one at a time, then add ube extract and mix until smooth.
Transfer the dough to a piping bag fitted with a star tip.
Heat vegetable oil in a deep fryer to 375°F (190°C).
Pipe 4-inch strips of dough into the oil, frying until golden brown, about 2-3 minutes per side.
Use a slotted spoon to transfer churros to a paper towel-lined baking sheet.
Mix shredded coconut and sugar in a bowl, then roll warm churros in the mixture until fully coated.
