1 cup granulated sugar 1 cup water 3 pods vanilla bean 2 tsp vanilla extract optional
Cut the vanilla beans lengthwise and scrape out the seeds using the back of a knife.
Combine the sugar, water, and vanilla pods with the seeds in a small saucepan.
Simmer over low heat, stirring occasionally, until the sugar dissolves completely and the mixture thickens slightly, about 10-12 minutes.
Remove from heat and strain the syrup into a bottle or jar, discarding the vanilla pods. Let cool before using.
