  • 1 cup peanut butter smooth or crunchy
  • ½ cup granulated sugar
  • ½ cup brown sugar
  • 1 large egg
  • 1 tsp vanilla extract
  • 1 tsp baking soda
  • ¼ tsp salt

Instructions
 

  • Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
  • In a mixing bowl, combine peanut butter, granulated sugar, and brown sugar. Mix until smooth.
  • Add the egg, vanilla extract, baking soda, and salt to the bowl. Stir until well combined and the dough comes together.
  • Scoop tablespoon-sized portions of dough and roll them into balls. Place them on the prepared baking sheet, leaving about 2 inches between each ball.
  • Using a fork, press down on each ball to create a crisscross pattern.
  • Bake for 8–10 minutes, or until the edges are lightly golden. Do not overbake.
  • Let the cookies cool on the baking sheet for 5 minutes before transferring them to a wire rack to cool completely.
