1 cup peanut butter smooth or crunchy ½ cup granulated sugar ½ cup brown sugar 1 large egg 1 tsp vanilla extract 1 tsp baking soda ¼ tsp salt
Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
In a mixing bowl, combine peanut butter, granulated sugar, and brown sugar. Mix until smooth.
Add the egg, vanilla extract, baking soda, and salt to the bowl. Stir until well combined and the dough comes together.
Scoop tablespoon-sized portions of dough and roll them into balls. Place them on the prepared baking sheet, leaving about 2 inches between each ball.
Using a fork, press down on each ball to create a crisscross pattern.
Bake for 8–10 minutes, or until the edges are lightly golden. Do not overbake.
