  • 1 1/4 cups all-purpose flour for crust
  • 1/2 cup unsalted butter cold and cubed, for crust
  • 1/4 cup powdered sugar for crust
  • 1 large egg yolk for crust
  • 1 tbsp cold water for crust
  • 3/4 cup granulated sugar for filling
  • 3 large eggs for filling
  • 1/2 cup fresh lemon juice for filling
  • 1 tbsp lemon zest for filling
  • 1/2 cup heavy cream for filling
  • 2 tbsp unsalted butter melted, for filling

Instructions
 

  • Preheat the oven to 350°F (175°C). Grease a 9-inch tart pan.
  • In a mixing bowl, combine flour, powdered sugar, and cold butter. Mix until it resembles coarse crumbs.
  • Add the egg yolk and cold water, mixing until the dough comes together.
  • Press the dough into the tart pan evenly, then prick the bottom with a fork.
  • Bake for 15 minutes, or until lightly golden. Let cool while preparing the filling.
  • In a saucepan, whisk together granulated sugar, eggs, lemon juice, and lemon zest over medium heat.
  • Add the heavy cream and melted butter, stirring constantly until thickened, about 5 minutes.
  • Strain the lemon curd through a sieve for a smooth texture, then pour into the baked crust.
  • Bake for an additional 10 minutes, then let the tart cool completely before serving.
  • Optional: Dust with powdered sugar or garnish with fresh berries before serving.
