1 1/4 cups all-purpose flour for crust 1/2 cup unsalted butter cold and cubed, for crust 1/4 cup powdered sugar for crust 1 large egg yolk for crust 1 tbsp cold water for crust 3/4 cup granulated sugar for filling 3 large eggs for filling 1/2 cup fresh lemon juice for filling 1 tbsp lemon zest for filling 1/2 cup heavy cream for filling 2 tbsp unsalted butter melted, for filling
Preheat the oven to 350°F (175°C). Grease a 9-inch tart pan.
In a mixing bowl, combine flour, powdered sugar, and cold butter. Mix until it resembles coarse crumbs.
Add the egg yolk and cold water, mixing until the dough comes together.
Press the dough into the tart pan evenly, then prick the bottom with a fork.

In a saucepan, whisk together granulated sugar, eggs, lemon juice, and lemon zest over medium heat.
Add the heavy cream and melted butter, stirring constantly until thickened, about 5 minutes.
