1 cup fresh lychee peeled and pitted, or 1 can of lychee in syrup 0.5 cup fresh lemon juice about 3-4 lemons 3 cups cold water 0.25 cup granulated sugar or to taste 1 cup ice cubes for serving 6 leaves fresh mint for garnish (optional)
In a blender, blend fresh or canned lychee (including syrup if using canned) until smooth.
Pour the blended lychee through a fine-mesh strainer into a pitcher to remove any pulp.
Add fresh lemon juice, cold water, and sugar to the pitcher. Stir until the sugar dissolves.
Fill glasses with ice and pour the lychee lemonade over. Garnish with fresh mint leaves if desired.
Optional Equipment: A muddler can be used to lightly crush mint leaves for added flavor.
