Ingredients
  

  • 1 cup lychee juice from canned lychees or fresh blended
  • 4 pieces lychees peeled and pitted
  • 0.5 cup sparkling water or soda water
  • 1 tbsp lime juice freshly squeezed
  • 1 tsp honey or simple syrup adjust to taste
  • 3-4 pieces mint leaves for garnish
  • 0.5 cup ice cubes

Instructions
 

  • In a cocktail shaker, muddle the peeled lychees with the lime juice and honey (or simple syrup) until well combined.
  • Add lychee juice and ice cubes to the shaker. Shake well to chill the mixture.
  • Strain the mixture into serving glasses filled with fresh ice.
  • Top each glass with sparkling water and gently stir.
  • Garnish with mint leaves and a whole lychee. Serve immediately and enjoy!

Notes

  • Customization: Add a splash of coconut water for an extra tropical twist.
  • Serving Tip: Rim the glass with sugar for a festive touch.
  • Storage: Best served fresh. If making ahead, keep the lychee mixture refrigerated and add sparkling water before serving.
