  • 1 9-inch pie crust pre-baked
  • 5 cups fresh strawberries hulled and halved
  • 3/4 cup granulated sugar
  • 2 tbsp cornstarch
  • 1/2 cup water
  • 1 tbsp lemon juice
  • 1 tsp vanilla extract
  • 1/2 cup whipped cream for topping, optional

Instructions
 

  • Arrange 4 cups of fresh strawberries in the pre-baked pie crust and set aside.
  • In a saucepan over medium heat, combine the sugar, cornstarch, water, and lemon juice. Whisk until smooth.
  • Cook, stirring constantly, until the mixture thickens and becomes glossy, about 5-7 minutes.
  • Remove from heat and stir in the vanilla extract.
  • Mash the remaining 1 cup of strawberries and stir them into the glaze.
  • Pour the glaze over the fresh strawberries in the pie crust, coating evenly.
  • Refrigerate for at least 2 hours, or until set.
  • Serve chilled with whipped cream if desired.

  • Storage: Refrigerate for up to 3 days. Best enjoyed fresh.
