Tofu Pudding

2 cups unsweetened soy milk 1 tsp agar-agar powder or gelatin for non-vegan option 2 tbsp sugar 0.5 tsp vanilla extract 0.25 cup water for agar-agar activation 0.5 cup brown sugar for syrup 0.5 cup water for syrup 1 slice ginger for syrup (optional)
In a small saucepan, dissolve agar-agar powder in 1/4 cup of water. Let sit for 5 minutes.
In a separate saucepan, heat soy milk and sugar over medium-low heat until warm but not boiling.
Whisk the agar mixture into the warm soy milk. Stir constantly for 3-4 minutes until fully dissolved. Remove from heat and mix in vanilla extract.
Strain the mixture through a fine-mesh strainer into serving bowls. Let cool slightly, then refrigerate for at least 50 minutes until set.
In a saucepan, combine brown sugar, water, and ginger (if using). Simmer over low heat for 5 minutes until thickened. Remove ginger and let cool.
Drizzle syrup over chilled tofu pudding and enjoy!
Optional Equipment: A silicone mold can be used for a more decorative shape.
Customization: Top with fresh fruits or toasted coconut for added texture.
Storage: Refrigerate for up to 3 days in an airtight container.
