Equipment

Ingredients

  • 175 g unsalted butter softened
  • 375 g powdered icing sugar
  • 2 tsp ube extract
  • 1-2 tsp coconut milk
  • 2 tbsp matcha powder
  • 0.125 tsp salt optional

Instructions

  • In a mixing bowl, beat the softened butter with an electric mixer until light and fluffy, about 2-3 minutes.
  • Gradually add the powdered icing sugar, one cup at a time, beating well after each addition until fully incorporated.
  • Mix in the ube extract, starting with 2 teaspoons. Adjust the quantity based on your preferred level of flavor and color intensity.
  • Add the matcha powder and 1-2 teaspoons of coconut milk. Beat until the frosting reaches your desired consistency. If it's too thick, add a bit more coconut milk.
  • Taste the frosting and add a pinch of salt if needed to balance the sweetness.
  • Use immediately to frost cupcakes, cakes, or desserts. Store any leftovers in an airtight container in the refrigerator for up to 1 week.

Notes

  • Customization: For a more vibrant green color, add an extra teaspoon of matcha powder.
  • Serving Suggestion: Pair with vanilla, chocolate, or ube-flavored cupcakes for the perfect combination.
  • Storage: Let refrigerated frosting sit at room temperature for 15 minutes before using to soften.
