  • 6 cups crispy rice cereal
  • 10 oz marshmallows mini or regular
  • 4 tbsp unsalted butter
  • 2 tsp ube extract
  • 0.25 tsp salt optional, to balance sweetness

Instructions
 

  • In a large saucepan over medium-low heat, melt the butter.
  • Add the marshmallows to the melted butter and stir continuously until completely melted and smooth.
  • Remove from heat and stir in the ube extract and salt (if using), mixing until well incorporated.
  • Quickly fold in the crispy rice cereal, stirring until fully coated with the ube marshmallow mixture.
  • Press the mixture into a greased or parchment-lined 9x9-inch baking pan. Use a spatula or greased hands to flatten evenly.
  • Let cool at room temperature for 30 minutes, then cut into squares and serve.

Notes

  • Customization: Drizzle with white chocolate or sprinkle shredded coconut on top for extra flavor.
