  • 2 cups water
  • 3 cups whole milk
  • 0.5 cup granulated sugar
  • 1 tsp vanilla extract or 1 vanilla bean, split and scraped
  • 1 tbsp butter optional, for added creaminess
  • 1 tsp ground cinnamon for garnish (optional)

Instructions
 

  • In a saucepan, combine the rice and water. Bring to a boil, then reduce heat to low and simmer for 10-15 minutes until the water is absorbed.
  • Stir in the milk and sugar. Cook over medium heat, stirring frequently, until the mixture thickens, about 20 minutes.
  • Stir in the vanilla extract and butter, if using, until well combined.
  • Spoon the pudding into bowls and garnish with a sprinkle of ground cinnamon if desired. Serve warm or chilled.
