1 cup short-grain white rice 2 cups water 3 cups whole milk 0.5 cup granulated sugar 1 tsp vanilla extract or 1 vanilla bean, split and scraped 1 tbsp butter optional, for added creaminess 1 tsp ground cinnamon for garnish (optional)
In a saucepan, combine the rice and water. Bring to a boil, then reduce heat to low and simmer for 10-15 minutes until the water is absorbed.
Stir in the milk and sugar. Cook over medium heat, stirring frequently, until the mixture thickens, about 20 minutes.
Stir in the vanilla extract and butter, if using, until well combined.
